The Chardonnay grapes were machine-harvested, destemmed and pressed direct to barrel (30% new and 70% one year old French oak) The wine spent eight months in oak with partial malolactic fermentation (10% malolactic fermentation to develop mouth feel), with lees stirring occurring at weekly intervals during the first four months. Barrel selection and minimal finings used prior to bottling.
A rich, round Chardonnay, of citrus, grapefruit and melon. The palate is full and layered – stonefruit, creamy nuttiness and spice. High quality French oak settles into the background with a delicate balance of fruit and acidity leading to a soft finish.
